Here Be Dragons

The title sums it up well. Write a story about dragons. Old time fire breathing dragons or some alien species that looks like dragons to humans. Or the usual switch and the humans are the dragons, after all we do like to hoard gold. Of course it doesn’t need to be based on physical appearances, "dragoness" can be a state of mind.

Or you can go for the meaning of the phrase. "Here be Dragons" meant: We don’t know what is there. That implies a story with a big unknown, a major exploration whether intended or not.
